Standard dish racks are 20 inches square with various heights and fit into most dish machines. Depending on your specific needs, there are racks available to hold almost any kind of item that will be sent through the washer. Most establishments will have a couple of each type in the dish room. There are several different kinds of dish racks available to suit the needs of any commercial kitchen. Peg racks have vertical pegs on the bottom and are designed to hold plates and small trays in a vertical position so both the front and back are thoroughly cleaned. Establishments that want to wash and store plates without having to load up a separate rack should consider a dish crate. Trays that are longer than 20 inches, there are special racks that have an open end for the trays to extend past the edge. Cups and glasses should be washed using a glass rack. These have several compartments for holding an individual cup on end. Be sure to measure both the height and widest diameter of your cups and get a glass rack that they will fit in. Small pots, pans and bowls can be washed in a peg rack, but some restaurants use a base rack, which does not have any pegs.
